Overnight Gluten Free Dairy Free Chia Seed Pudding

I am all about easy and quick recipes! No one really has much time to do a lot of cooking and specially if you started developing a sensitivity to eggs like I did, you got to come up with things you can eat in the morning that are quick and easy!

Overnight Chia Seed Pudding

1 Cup Coconut Milk (or your favorite)

1 Cup Blueberries (or any fruit fresh or frozen)

1 tbsp. honey or pure maple syrup

4 tbsp. Dairy Free yogurt

3 tbsp. chia seeds

1 scoop of Plant Fusion Protein


In the bowl of your food processor or blender, combine all the ingredients except the chia seeds and process until smooth. Taste and add more sweetener if needed. Pour mixture into jar and add 2 tbsp. of chia seeds. Let the chia pudding rest for about 1 hour and shake it up. Then let it rest in the refrigerator overnight. Eat by the spoonful when you wake up in the morning!
